NEW HAVEN, Conn. (WTNH) – This is a part of the Olde Mistick Village Merchant Series. OMV/ Pink Basil is a Thai restaurant and today they will be cooking Thai Pumpkin Curry with chicken.
Joining us in the Bender Kitchen is Owner, Tai Au and Manager, Amber Oliver of Pink Basil.

Thai Pumpkin Curry with Chicken
Coconut Milk, Brown Sugar, Salt, Fish Sauce, Red Curry Paste, Sliced Pumpkin, Sliced Carrots, Sliced Green Pepper, Sliced Red Pepper, Basil, Sliced Chicken
Red Curry Paste: Hot Red Pepper, Galangra, Lemon grass, Onions, Garlic
In a hot pot put red curry paste ingredients together. Stir until cooked.
In another hot pot put red curry paste, brown sugar, salt, fish sauce, and coconut milk till boiling. Add sliced chicken and stir till cooked. Add pumpkin, carrots, basil, green pepper and green pepper. Keep boiling until pumpkin and carrots are soft. Serve with Jasmine rice.
